Each roll ferments alongside our loaves — same wild starter, same long rise, same Hudson Valley kitchen. We don't speed it up. We don't sweeten it more. We let the dough do its quiet work overnight, and the flavor that comes out the other side is something a fast cinnamon roll simply can't reach.

Warm one slightly before serving — the butter softens, the cinnamon opens up, and the brown catches the light. Best with strong coffee on a slow morning, or torn apart with your hands while it's still warm from the oven. One roll is rarely enough. Two is the right number. Three is honest.
